  • I'm Caitlin, but you can call me Cait. I'm a photographer. My very handsome husband and completely adorable son are the best things in my life. We live in South Jersey and enjoy spending as much time as we can together. I can't forget our dog, Miley, she's the greatest mini golden doodle ever. Family is very important to us - which is why we've surrounded ourselves with family and great friends. I'm very easy to talk to. I'm a people person. And I laugh pretty much constantly - I love to laugh. I enjoy an awesome cup of Starbucks coffee, anything rustic, mason jars, flip flops, the Philadelphia Phillies and all things Disney.

Sunday’s are ‘Slowdays’

There are some days that I just LIVE for. Sundays are slowing becoming one of those days. I love the laziness and the lax-idazical ideas of everything that is Sunday. It’s a day for reflecting and relaxing. I love that Sundays are for walking the dog and maybe catching a movie with the husband. Sundays have become days that are filled with hanging out and catching up with family. And I love when Sundays end with “Sunday Night Dinner” at Momma Scott’s house.

Today started out just like every Sunday should…with a steaming cup of hot chocolate at Brunch. Mmmm….Look how delicious!

I hope you enjoyed your Sunday ‘Slowday’. I know we spent lots of time with each other. And the puppy of course!

Lucky Charm – Little Emmett

On a beautiful Spring St. Patrick’s Day, I headed up to my Aunt’s house for some good old-fashioned St. Patty’s day goodies. Besides the corned beef and shamrock shaped green cookies, the best part of going to visit was seeing my devilishly handsome 2nd cousin Emmett. I love him. I mean seriously, look at his face, he’s going to be a heartbreaker, just like his dad and sweet as pie like his mom. Growing up in North Carolina is bound to make him a true Southern Gentleman. With fierce eyes like his he’s just bound to be popular with the ladies when he grows up. At the ripe old age of 4 months, the little guy is growing rapidly. Doubling in size since he was born, he’s going to be a BIG BOY like his dad. But we wouldn’t have it any other way!

A semi-planned mini-shoot of Emmett was just the thing to make Saint Patrick’s day that much better. So enjoy some of the pictures captured below! And if you love ‘em, leave a comment below!!

I know the photo below isn’t completely in focus, but I just luh-ve how great he is at blowing spit bubbles. He’s amazing.

Foodies – Pasta with Meatballs, Peas and Broccoli

So in my most recent found time, I’ve started cooking more. It’s amazing how sometimes even just throwing things into a pot together can result in such a delicious meal. One of my favorites, actually a recipe I received from a friend but modified slightly, is what I made two a few nights ago. You’ll love this recipe because there are no actual measurements. But nothing to worry about, there’s a 99% chance that you can NOT mess this recipe up.

 

Pasta with Meatballs, Peas and Broccoli
Serves 4

Ingredients:
Fresh/Frozen Meatballs (About 10-15 small meatballs)
Fresh/Frozen Peas (2 – 2.5  cups)
Fresh/Frozen Broccoli Florets (2 – 2.5 cups)
Pasta (Bowties, spirals, etc.) (1 box for 4 people)
Parmesean or Locatelli Grated Cheese
Butter
Salt/Pepper
Ground up the meatballs in a frying pan. Add a teaspoon of butter to prevent meatballs from sticking. Over medium/high heat, brown crushed meatballs. Once brown, place in a small bowl until rest of the ingredients are completed.

Boil one pot of water for the pasta of your choice. Cook pasta until tender. Drain and place in a large bowl.

Boil two pots of water for the vegetables. In one pot of water, boil peas until soft and tender. Remove peas from heat. Drain and strain and place peas in a bowl with a teaspoon of butter to keep them moist. Cover and keep warm. In the second pot of water, boil broccoli florets until the stems are soft and tender. Remove broccoli from heat. Drain and strain and place broccoli in a bowl with a teaspoon of butter to keep them moist. Cover and keep warm.

In the large bowl of pasta, mix in peas, broccoli, meatballs and about 2-2.5 tablespoons of butter. Mix thorougly, salt and pepper to taste. Add grated cheese  (your discretion) and mix thoroughly.

 

This recipe is DE-licious. My husband isn’t a fan of pasta’s without some sort of sauce/gravy on it, but he LOVED this one. Don’t be afraid to add extra vegetables. The broccoli is my addition, since I can’t seem to live without it anymore! Enjoy!!
